Easy Healthy Homemade Chicken Soup

A comforting bowl of homemade chicken soup packed with lean protein and fresh vegetables, perfect for any occasion.

  • 2 poached chicken breasts, shredded
  • 4 cups chicken broth
  • 2 cups winter vegetables (carrots, celery, potatoes)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a splash of olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing gently until softened, about 2-3 minutes.
  2. Toss in the winter vegetables: carrots, celery, and potatoes. Sauté with salt for about 5 minutes.
  3. Pour in the 4 cups of chicken broth and bring to a gentle simmer.
  4. Stir in the shredded chicken, thyme, and rosemary. Season with salt and pepper to taste.
  5. Let it simmer for approximately 20 minutes, or until the vegetables are tender.
  6. Garnish with freshly chopped parsley before serving.

Notes

Make-ahead: This soup stores wonderfully for up to 3-4 days in the fridge. You can also freeze portions for up to 3 months.
