Easy Cowboy Butter Chicken Pasta

A delightful dish featuring tender pasta tossed in a creamy garlic butter sauce, complemented by crispy chicken and vibrant broccoli.

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (such as penne or fettuccine)
  • 2 cups broccoli florets
  • 1/2 cup butter
  • 3 cloves garlic, minced
  • 1 lemon (juice and zest)
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to boil and cook your pasta according to package instructions. In the last three minutes, toss in the broccoli florets. Once cooked, drain and set aside.
  2. Sauté the garlic: In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  3. Cook the chicken: Add the chicken breasts to the skillet, seasoning with salt and pepper. Cook undisturbed for about 6-7 minutes on each side, until golden brown. Remove from skillet and let rest before slicing.
  4. Combine ingredients: Add the cooked pasta and broccoli to the skillet with garlic butter. Squeeze in the lemon juice and sprinkle the zest, tossing everything together.
  5. Serve it up: Plate your dish, laying slices of chicken on top of the buttery pasta. Sprinkle with Parmesan cheese if desired.

Notes

This dish can be made ahead of time. Cook the chicken and pasta, then store separately. Reheat with a splash of water or broth.
