Easy Coconut Chicken Rice Bowl

A comforting and delicious coconut chicken rice bowl with tender chicken, creamy coconut sauce, and fresh vegetables.

  • 1 lb boneless, skinless Chicken Breast
  • 1 can (13.5 oz) Coconut Milk
  • 1 cup Jasmine Rice
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 tbsp Ginger, grated
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive Oil
  • Mixed Vegetables (bell peppers, spinach, snap peas)
  • 1 Lime, juiced

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Add chopped onion, minced garlic, and grated ginger; sauté for 2-3 minutes.
  3. Introduce the chicken breast and cook until browned, about 5-7 minutes.
  4. Pour in the coconut milk and season with salt and pepper; stir to coat the chicken.
  5. Allow to simmer on low until the chicken is cooked through, about 10 minutes.
  6. Cook the rice according to the package instructions.
  7. Serve rice in bowls, topped with chicken and sauce, and a splash of lime juice.

Notes

For meal prep, store chicken and sauce separately from rice. Good for up to 3 days in the fridge.
