Easy Chicken Zucchini Stir Fry

A delicious and nutritious stir fry featuring tender chicken, fresh zucchini, and colorful vegetables, coated in a savory soy sauce glaze.

  • 1 lb chicken breast, diced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pan over medium-high heat.
  2. Add the garlic and ginger, sautéing for about 1 minute.
  3. Cook the chicken for 5-7 minutes until golden brown.
  4. Incorporate the vegetables (zucchini, bell pepper, carrot) and stir to combine.
  5. Add the soy sauce and stir-fry for another 3-4 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot over rice or noodles if desired.

Notes

For a vegetarian version, substitute chicken with tofu. Customize with seasonal vegetables and spices to taste.
