Easy Asian Chicken Pasta Salad

A vibrant and flavorful salad with rotini, chicken, and fresh vegetables, perfect for picnics and gatherings.

  • 0.5 cup vegetable oil
  • 0.35 cup soy sauce
  • 0.33 cup rice vinegar
  • 1.25 tsp sesame oil
  • 3.5 tbsp sugar
  • 0.5 tsp ginger (grated or powdered)
  • 0.25 tsp pepper
  • 0.25 tsp garlic powder
  • 2 tbsp sesame seeds
  • 16 oz rotini
  • 5 cups spinach (fresh and chopped)
  • 1.5 cups chicken (shredded, cooked)
  • 0.5 cup bell pepper (diced)
  • 15 oz mandarin oranges (drained)
  • 0.5 cup carrots (shredded)
  • 0.33 cup green onions (sliced)
  • 0.33 cup cilantro (chopped)
  • 0.33 cup almonds (sliced or whole)

Instructions

  1. Cook the rotini: Bring a large pot of salted water to a rolling boil. Add the rotini and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside to cool.
  2. Prepare the dressing: In a mixing bowl, whisk together the vegetable oil, soy sauce, rice vinegar, sesame oil, sugar, ginger, pepper, and garlic powder until smooth.
  3. Combine ingredients: In a larger mixing bowl, mix the cooled rotini, shredded chicken, spinach, bell pepper, carrots, mandarin oranges, green onions, cilantro, and almonds.
  4. Dress the salad: Pour the dressing over the salad mixture and gently toss to coat evenly.
  5. Chill & Serve: Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad can be made ahead of time and stays fresh for a few days in the fridge. Toss before serving to redistribute the dressing.
