Shrimp Linguine

A quick yet luxurious shrimp linguine dish that combines succulent shrimp, aromatic herbs, and a creamy sauce, perfect for both weeknight dinners and festive gatherings.

  • 1 pound large shrimp, fresh or frozen
  • 8 ounces linguine
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 cup white wine
  • 1/2 cup heavy cream
  • Fresh parsley, chopped
  • Salt and pepper to taste
  • Red pepper flakes, to taste

Instructions

  1. Boil the Pasta: Fill a large pot with water and add a generous pinch of salt. Bring it to a rolling boil. Add the linguine and cook according to the package instructions until al dente, stirring occasionally.
  2. Drain and Set Aside: Once the pasta is cooked to perfection, drain it in a colander but reserve about a cup of the pasta water for later.
  3. Sauté the Garlic: In the skillet, melt one tablespoon of butter with a splash of olive oil over medium heat. Add minced garlic, allowing it to sizzle until fragrant (about 30 seconds). Be careful not to burn it!
  4. Cook the Shrimp: Toss in the shrimp, sprinkling them with salt, pepper, and a pinch of red pepper flakes. Sauté until they turn pink and opaque, around 2-3 minutes per side.
  5. Deglaze the Pan: Pour in the white wine and let it simmer for a couple of minutes, stirring to scrape up any tasty bits from the skillet.
  6. Bring it all Together: Lower the heat and add the heavy cream along with the cooked linguine. Toss everything together, adding a bit of the reserved pasta water if needed to achieve a creamy consistency.
  7. Finish with Fresh Herbs: Stir in chopped parsley, a final swirl of olive oil, and adjust salt and pepper to taste.
  8. Serve Hot: Plate up the luscious linguine and shrimp, garnishing with additional herbs if desired.

Notes

Don’t overcook the shrimp. They should be just opaque to ensure maximum juiciness. The sauce will thicken as it sits, so add more pasta water if necessary.
