  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese
  • 1/2 cup granulated sugar
  • 1/2 cup mini chocolate chips
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or cooking spray.
  2. Combine 1 1/2 cups flour and 1/4 cup powdered sugar in a mixing bowl. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Add the egg and 1 teaspoon vanilla extract to the flour mixture, mixing gently until a dough forms.
  4. Press the dough into the bottom of the prepared baking dish and bake for 20 minutes until lightly golden.
  5. Mix the ricotta cheese, granulated sugar, and 1 teaspoon vanilla extract until smooth, then fold in the mini chocolate chips.
  6. Spread the ricotta mixture evenly over the baked crust.
  7. Bake for an additional 25 minutes until set.
  8. Cool completely before dusting with powdered sugar, cutting into squares, and serving.
