Cucumber Mozzarella Salad

A crisp and refreshing salad featuring cucumbers, mozzarella, and tomatoes, dressed with olive oil and balsamic vinegar.

  • 1/2 English cucumber, cut into quarters lengthwise and sliced
  • 3 cups halved cherry tomatoes
  • 8 oz fresh mozzarella balls (or 1 cup diced fresh mozzarella)
  • 1 large diced avocado
  • 1/3 cup chopped basil leaves
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, peeled and either pressed or grated
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Assemble the salad ingredients by placing the cucumber, cherry tomatoes, mozzarella, avocado, and basil in a large serving bowl.
  2. Prepare the dressing by whisking together olive oil, balsamic vinegar, garlic, salt, and black pepper in a small bowl until emulsified.
  3. Dress the salad moments before serving by drizzling the dressing over and gently tossing to coat.
