- 1 large cucumber, thinly sliced
- 1/4 cup fresh mint leaves, chopped
- 1/2 cup cream cheese, softened
- 1 tablespoon lemon juice
- Salt and pepper to taste
- In a bowl, mix the softened cream cheese, chopped mint, lemon juice, salt, and pepper until well combined.
- Spread the cream cheese mixture evenly on one side of each slice of bread.
- Layer the cucumber slices on half of the bread slices.
- Top with the remaining bread slices, cream cheese side down.
