1 lb salmon fillet, skinless and boneless
1 cup breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1/4 cup grated Parmesan cheese
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup olive oil
1/2 cup heavy cream
2 cloves garlic, minced
1 tbsp lemon juice
Fresh parsley, for garnish
Instructions
Preheat the oven to 400°F (200°C).
Cut the salmon into bite-sized pieces.
In a bowl, mix breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
In another bowl, beat the eggs.
Dredge each salmon piece in flour, dip in the egg, and then coat with the breadcrumb mixture.

Transfer the salmon bites to a baking sheet and bake for 10 minutes.
In a saucepan, heat heavy cream and add minced garlic and lemon juice, stirring until combined.
