Crispy Dill Chicken Sandwich

  • 2 large boneless, skinless chicken breasts (68 ounces each)
  • 1 cup buttermilk
  • 2 tablespoons dill pickle juice
  • 1 large egg
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 tablespoon dried dill weed
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mayonnaise
  • 2 tablespoons finely chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste
  • 4 brioche buns, split
  • 4 slices cheddar cheese (or your favorite cheese)
  • 1 cup shredded lettuce
  • 1/2 cup dill pickle chips
  • 2 tablespoons butter, melted (for toasting buns)
  • Vegetable oil (for frying, about 4-6 cups)

Instructions

  1. Begin by whisking together the buttermilk, dill pickle juice, egg, salt, black pepper, garlic powder, and paprika in a medium bowl to create an aromatic marinade. Submerge the chicken breasts in this mixture and refrigerate for at least 2 hours, ideally overnight.
  2. In a large dish, combine flour, cornstarch, dried dill weed, baking powder, salt, and black pepper.
  3. Once marinated, remove the chicken from the buttermilk and dredge each piece in the flour mixture until fully coated.
  4. Heat the vegetable oil in a deep pot to 350°F (175°C) and fry the chicken for 6-8 minutes on each side until golden brown and the internal temperature reaches 165°F (73.9°C). Drain on paper towels.
  5. While the chicken cools, prepare the dill aioli by mixing mayonnaise, fresh dill, lemon juice, minced garlic, and Dijon mustard in a bowl. Chill for about 30 minutes.
  6. Brush the brioche buns with melted butter and toast them on a skillet until golden brown.
  7. Assemble the sandwich by spreading the dill aioli on both cut sides of the toasted buns, adding the shredded lettuce, fried chicken, cheddar cheese, and dill pickle chips.

Notes

Make-ahead: Prepare the dill aioli and marinate the chicken the night before. For lighter options, use an air fryer or bake in the oven.
