These crispy cauliflower bites offer a delightful crunch with a golden breadcrumb crust and are perfect as an appetizer or side dish.

  • 1 cup breadcrumbs (consider panko for extra crunch)
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 large eggs, beaten (or aquafaba for egg-free)
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and pepper in a bowl.
  3. Dip each cauliflower floret into the beaten eggs, ensuring it’s fully submerged, then transfer to the breadcrumb mixture, pressing gently to coat.
  4. Pour the coated florets onto the prepared baking sheet, spacing them evenly.
  5. Spray them lightly with olive oil.
  6. Bake for 20-25 minutes until golden brown and crispy.

Notes

For make-ahead options, coat the florets a day in advance and store in the fridge. To retain crunch when reheating, place them in the oven.
