Creamy Zucchini Noodle Alfredo with Chicken

A light yet indulgent dish featuring spiralized zucchini noodles and a rich Alfredo sauce made with healthy ingredients.

  • 2 medium zucchinis, spiralized into noodles
  • 2 chicken breasts, cooked and diced
  • 1 cup cauliflower, steamed and blended
  • 1/2 cup low-fat milk or almond milk
  • 2 tablespoons nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  2. Sauté the cooked, diced chicken and spiralized zucchini noodles for 3-4 minutes, until slightly tender but still crunchy.
  3. Make the Alfredo sauce by blending steamed cauliflower, milk, nutritional yeast, salt, and pepper until smooth and creamy.
  4. Combine the sauce with the chicken and zucchini in the skillet. Stir until every noodle is coated, cooking for an additional 2-3 minutes.
  5. Serve warm, garnished with Parmesan cheese if desired.

Notes

For a vegetarian option, substitute chicken with sautéed mushrooms or chickpeas. Make the Alfredo sauce ahead of time to save on preparation.
