A delicious and quick dinner recipe featuring salmon cooked in a creamy Tuscan sauce with spinach and sun-dried tomatoes.

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the salmon fillets with salt and pepper, then add them to the skillet.
  3. Cook the salmon for about 4-5 minutes on each side until golden brown and cooked through.
  4. Remove the salmon from the skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute.
  6. Add heavy cream, spinach, and sun-dried tomatoes, stirring to combine.
  7. Stir in Parmesan cheese until melted and the sauce is creamy.
  8. Return the salmon to the skillet, spooning the sauce over the top.
  9. Garnish with fresh basil before serving.
