Creamy Gnocchi with Spinach and Feta

A comforting dish of plump gnocchi in a rich and creamy sauce, with fresh spinach and tangy feta cheese.

  • 1 package of gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)

Instructions

  1. Cook the gnocchi in a large pot of salted boiling water according to package instructions until they float. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat and sauté minced garlic for about 30 seconds until fragrant.
  3. Add the fresh spinach and sauté until wilted, about 2-3 minutes.
  4. Pour in heavy cream and lower the heat to medium-low, stirring in crumbled feta cheese until melted slightly.
  5. Combine the cooked gnocchi with the sauce, stirring gently to coat.
  6. Season with salt and pepper to taste, and serve hot, garnished with Parmesan cheese if desired.

Notes

For make-ahead options, prepare the sauce in advance and store it in the refrigerator for up to two days. Reheat gently before serving.
