Creamy Garlic Shrimp with Mashed Potatoes

Indulge in a warm, comforting dish of flavorful shrimp coated in a velvety garlic cream sauce served over fluffy mashed potatoes.

Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and cut into chunks
  • 1/2 cup milk
  • 1/4 cup sour cream
  • Chopped parsley for garnish

Instructions

  1. Boil the potatoes: Place the peeled and chunked potatoes into a large pot of salted water. Boil until tender, about 15-20 minutes. Drain and return to the pot.
  2. Mash the potatoes: Add milk and sour cream. Use a potato masher or fork and mash until fluffy and creamy. Set aside and keep warm.
  3. Sauté the garlic: In a skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Cook the shrimp: Add the shrimp to the skillet and cook until they turn pink, about 3-5 minutes.
  5. Create the sauce: Pour in the heavy cream and season generously with salt and pepper. Allow the mixture to simmer for a few minutes until it thickens.
  6. Serve: Scoop mashed potatoes onto a plate, create a well in the center, and pour the creamy shrimp over it. Garnish with chopped parsley.

Notes

For a lighter version, substitute heavy cream with half-and-half or milk and flour. Serve with steamed vegetables or crusty bread.
