Creamy Garlic Sauce Baby Potatoes

Tender baby potatoes coated in a silky garlic cream sauce, perfect for any meal.

  • 1 pound baby potatoes
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, then place them on a baking sheet lined with parchment paper.
  3. Drizzle the potatoes with olive oil, and season generously with salt and pepper. Toss them to ensure an even coat.
  4. Roast in the oven for 25-30 minutes, flipping halfway through, until they turn golden and tender.
  5. Heat a saucepan over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  6. Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese, mixing until melted and smooth.
  7. Once the potatoes are done roasting, pour the creamy garlic sauce over them and toss gently to combine.
  8. Garnish with fresh chopped parsley and serve warm.

Notes

For extra crispy potatoes, turn on the broiler for the last 2-3 minutes of roasting.
