Cowboy Butter Lemon Bowtie Chicken with Broccoli

  • 2 chicken breasts, diced
  • 2 cups broccoli florets
  • 1/2 cup cowboy butter
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Parmesan cheese, for serving

Instructions

  1. Begin by cooking the bowtie pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, melt the cowboy butter.
  3. Add the diced chicken to the skillet and cook until golden brown, about 5 to 7 minutes.
  4. Toss in the broccoli florets and minced garlic, cooking for another 3 to 4 minutes.
  5. Stir in the cooked bowtie pasta along with the lemon juice and zest.
  6. Season with salt and pepper and taste, adjusting as necessary.
  7. Serve warm, topped with freshly grated Parmesan cheese.
