  • 1 can chickpeas, drained and rinsed
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1/2 red onion, diced
  • 1/4 cup parsley, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Combine your base ingredients: In a large bowl, toss together the cottage cheese, chickpeas, diced bell pepper, cucumber, red onion, and parsley.
  2. Prepare the dressing: In a separate small bowl, whisk together the olive oil, fresh lemon juice, salt, and pepper until blended.
  3. Dress your salad: Pour the dressing over the salad mixture, and gently fold it in.
  4. Serve or chill: Serve the salad immediately or cover and refrigerate for 30 minutes.
