4 fish fillets (such as tilapia or cod)
1 cup shredded coconut
1/2 cup breadcrumbs
1/2 cup flour
2 eggs, beaten
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Oil for frying
Instructions
Preheat the oven to 400°F (200°C) if baking.
In a shallow dish, mix together the flour, salt, pepper, garlic powder, and paprika.
In another dish, beat the eggs.
In a third dish, combine the shredded coconut and breadcrumbs.
Dredge each fish fillet in the flour mixture, then dip in the beaten eggs, and finally coat with the coconut-breadcrumb mixture.
Heat oil in a skillet over medium heat and fry the fish for about 3-4 minutes on each side until golden brown. Alternatively, place the coated fish on a baking sheet and bake for 15-20 minutes in the preheated oven.
Serve hot with your favorite dipping sauce.
Notes
For a spicier version, add cayenne pepper to the flour mixture.
Serve with a side of mango salsa for a tropical twist.
Ensure the oil is hot enough before frying to achieve a crispy texture.
