Cilantro Lime Rice and Black Beans

A vibrant dish featuring fluffy cilantro lime rice paired with creamy black beans, perfect as a side or a main course.

  • 1 cup long-grain white rice
  • 2 cups vegetable broth or water
  • 1 can black beans, rinsed and drained
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse the rice: Start by rinsing the rice under cold water until the water runs clear.
  2. Cook the rice: In a medium saucepan, combine the rinsed rice and vegetable broth (or water). Bring to a boil, cover, and let it simmer for about 15-20 minutes until tender.
  3. Prepare the black beans: While the rice cooks, heat the olive oil in a skillet over medium heat. Add minced garlic and sauté until fragrant.
  4. Add the black beans: Stir in the rinsed black beans, heat through and mix in lime juice and chopped cilantro.
  5. Fluff the rice: Once cooked, fluff the rice with a fork, season with salt and pepper, then serve topped with the black bean mixture.

Notes

For added zest, consider garnishing with extra cilantro. This dish stores well in the fridge for up to three days.
