Chocolate Chip Vanilla Custard Brioche

Indulge in the delightful experience of fluffy brioche filled with luscious vanilla custard and rich chocolate chips, perfect for breakfast or dessert.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup warm milk
  • 3 large eggs
  • 1/2 cup unsalted butter (softened)
  • 1 cup vanilla custard
  • 1 cup chocolate chips

Instructions

  1. Activate the yeast: In a small bowl, combine the warm milk and yeast. Let it sit for about 5 minutes until foamy.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour, sugar, and salt.
  3. Combine ingredients: Mix in the yeast mixture and eggs until just combined. Then, add softened butter and knead until the dough is smooth, about 8-10 minutes.
  4. Let the dough rise: Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place until doubled in size, about 1 hour.
  5. Shape the dough: Punch down the dough, roll it out on a floured surface, and cut into squares.
  6. Fill the dough: Spoon a small amount of vanilla custard and a few chocolate chips into each square, then fold and seal.
  7. Second rise: Place filled brioche on a baking sheet, cover, and let rise for another 30 minutes.
  8. Bake: Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  9. Cool before serving: Allow to cool slightly on a wire rack.

Notes

For a make-ahead option, prepare the dough hours in advance and refrigerate it overnight. You can also use an air fryer for faster baking.
