Chocolate Chip Protein Banana Bread

A nourishing and indulgent banana bread packed with protein, dark chocolate, and the warmth of cinnamon.

  • 3 large ripe bananas, mashed
  • 2 large eggs
  • ⅓ cup maple syrup or honey
  • ¼ cup melted coconut oil or light olive oil
  • 1 teaspoon vanilla extract
  • 1½ cups whole wheat flour
  • ⅓ cup vanilla or unflavored protein powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine sea salt
  • ½ cup dark chocolate chips (70% cocoa, no added sugar)
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9 x 5 inch loaf pan and line it with parchment paper.
  3. Mash the bananas until smooth.
  4. Whisk in the eggs, maple syrup or honey, melted coconut oil, and vanilla extract.
  5. In a separate bowl, whisk together the whole wheat flour, protein powder, baking soda, baking powder, cinnamon, and salt.
  6. Fold the dry ingredients into the wet mixture until just combined.
  7. Gently fold in the dark chocolate chips and nuts.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50 to 55 minutes or until a toothpick comes out clean.
  10. Allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

For added flavor, serve with nut butter or yogurt. Can be frozen in slices for up to three months.
