  • 2 chicken breasts
  • 1 cup chimichurri sauce
  • 2 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1 cup corn
  • 1/2 cup black beans, rinsed
  • 1/4 cup cilantro, chopped
  • 1/2 cup garlic sauce
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken breasts in chimichurri sauce for at least 30 minutes.
  2. Preheat the grill to medium-high heat.
  3. Grill the chicken for 6-7 minutes on each side or until fully cooked.
  4. While the chicken is grilling, prepare the rice according to package instructions.
  5. Once the chicken is cooked, let it rest for a few minutes before slicing.
  6. In a bowl, layer the cooked rice, grilled chicken, cherry tomatoes, avocado, corn, and black beans.
  7. Drizzle with garlic sauce and sprinkle with chopped cilantro.
