Chickpea Beet Feta Salad

A vibrant and nutritious salad featuring chickpeas, beets, and feta cheese, perfect for a light lunch or a side dish at gatherings.

  • 1 can chickpeas, rinsed and drained
  • 2 medium beets, cooked and diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine the rinsed chickpeas, diced beets, crumbled feta cheese, and finely chopped red onion.
  2. In a small mixing bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until beautifully emulsified.
  3. Pour the dressing over the salad and toss gently with a spatula.
  4. Serve immediately, or refrigerate for about 30 minutes for enhanced flavors.
  5. Garnish with fresh chopped parsley before serving.

Notes

This salad can be made a day in advance. Store in an airtight container in the fridge for up to three days.
