Chickpea, Apple, and Cranberry Salad

A vibrant salad featuring chickpeas, crisp apples, tart cranberries, and a zesty dressing, perfect for any occasion.

  • 1 can chickpeas, drained and rinsed
  • 1 apple, diced (Fuji or Honeycrisp)
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Combine the ingredients: In a large mixing bowl, gently toss together the drained chickpeas, diced apple, dried cranberries, finely chopped red onion, and chopped celery.
  2. Make the dressing: In a smaller bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper until well combined.
  3. Dress the salad: Pour the dressing over your salad mixture and gently toss everything together.
  4. Garnish and serve: If desired, sprinkle fresh cilantro or parsley on top. Serve immediately or let the salad chill in the fridge for about an hour.

Notes

This salad can be made a day in advance; just hold off on adding the apple until you’re ready to serve to keep it fresh.
