Chicken Wellington is a delightful twist on the classic beef Wellington, featuring tender chicken breast wrapped in flaky pastry with a savory filling.

  • 2 chicken breasts
  • 1 sheet of puff pastry
  • 200g mushrooms, finely chopped
  • 100g spinach
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a pan, heat olive oil and sauté onions and garlic until translucent.
  3. Add mushrooms and spinach, cooking until the moisture evaporates. Season with salt and pepper.
  4. Let the mixture cool, then spread it over the chicken breasts.
  5. Roll out the puff pastry and place the chicken on top of it.
  6. Wrap the pastry around the chicken, sealing the edges.
  7. Brush the pastry with beaten egg.
  8. Bake in the preheated oven for 25-30 minutes or until golden brown.
  9. Let it rest for a few minutes before slicing and serving.
