Hearty Chicken Noodle Soup

A warm and comforting bowl of chicken noodle soup filled with tender chicken, fresh vegetables, and egg noodles in a savory broth.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery, cooking until the vegetables soften, about 5 minutes.
  2. Add garlic: Stir in the minced garlic and allow it to cook for another minute.
  3. Pour in the chicken broth and add the shredded chicken, dried thyme, and parsley. Bring the mixture to a gentle boil.
  4. Add the egg noodles to the pot and let them cook for 5-7 minutes, or until they are al dente.
  5. Finish the soup by seasoning with salt and pepper to taste. Serve hot.

Notes

Consider prepping the vegetables in advance to save time. For added nutrition, toss in fresh spinach or kale during the last few minutes of cooking.
