Chicken and Hatch Chile Stew

  • 1 lb shredded chicken
  • 2 cups fresh corn
  • 1 cup rice
  • 2 cups hatch chiles, diced
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Sauté the chopped onion and minced garlic until they soften and become fragrant, about 3 to 4 minutes.
  3. Incorporate the diced hatch chiles, cooking for an additional 2 minutes.
  4. Combine the shredded chicken, fresh corn, rice, chicken broth, cumin, salt, and pepper. Mix well.
  5. Bring the mixture to a gentle boil over high heat.
  6. Simmer the stew on low heat, covered, for about 30 minutes, stirring occasionally.
  7. Serve hot in bowls and enjoy!

Notes

This stew can be made ahead and refrigerated. Reheat on the stove before serving. You can also use an Instant Pot for a quicker version.
