Cheesy Zucchini and Corn Casserole

A comforting casserole filled with buttery zucchini, sweet corn, and a creamy cheese topping, perfect for family gatherings or weeknight dinners.

  • 2 medium zucchini, thinly sliced
  • 1 cup corn (fresh or frozen)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 cup milk
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • Optional: chopped onions or bell peppers

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the sliced zucchini and corn in a large bowl.
  3. Whisk together the milk, eggs, salt, pepper, and garlic powder in another bowl.
  4. Pour the milk mixture over the vegetables and mix well.
  5. Stir in the shredded cheese until well combined.
  6. Grease a baking dish with olive oil and pour the mixture into it.
  7. Top with breadcrumbs.
  8. Bake for 30-35 minutes or until the top is golden brown and bubbly.
  9. Let the casserole sit for a few minutes before serving.

Notes

You can prepare the casserole a day in advance, and it freezes well for up to three months.
