Carrot Bars with Cream Cheese Frosting

  • ½ cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 3 large eggs
  • 1 cup melted butter
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking pan by greasing it or lining with parchment paper.
  3. Mix the dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Combine the wet ingredients: In another bowl, beat together the sugar, eggs, and melted butter until fluffy. Stir in the grated carrots and nuts if using.
  5. Blend the mixtures: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Bake the batter for 25-30 minutes until a toothpick comes out clean.
  7. Cool the bars in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Prepare the frosting by beating the cream cheese and butter until creamy. Gradually add the powdered sugar and vanilla mix until smooth.
  9. Frost the cooled bars with cream cheese frosting and sprinkle with additional chopped nuts or cinnamon if desired.

Notes

These bars can be made ahead of time and stored in an airtight container. They taste even better after resting.
