California Roll Sushi Bowl

A vibrant and customizable California Roll Sushi Bowl filled with fresh ingredients and flavors reminiscent of summer.

Ingredients

  • 1 cup short-grain sushi rice
  • 1.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 oz imitation crab meat (or real crab)
  • 1 medium cucumber, sliced
  • 1 ripe avocado, diced
  • 2 tbsp low-sodium soy sauce
  • Sriracha (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. Combine the rinsed rice with 1.5 cups of water in a rice cooker or pot and cook according to package instructions.
  3. Transfer the cooked rice to a mixing bowl and drizzle rice vinegar over it, adding sugar and salt.
  4. Gently fold the mixture to combine while the rice is still warm.
  5. Slice your cucumber thinly and dice the ripe avocado into bite-sized pieces.
  6. Layer the sushi rice in serving bowls, then beautifully arrange the cucumber slices, avocado, and crab on top.
  7. Drizzle with low-sodium soy sauce and a squeeze of Sriracha if desired, and serve immediately.

Notes
