Creamy Broccoli Cheddar Soup

  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat until it bubbles gently.
  2. Add chopped onions and minced garlic; cook until softened, about 5 minutes.
  3. Drop in the fresh broccoli florets and pour in the vegetable broth.
  4. Bring to a rolling boil, then reduce heat and simmer for around 15 minutes.
  5. Blend the soup until smooth using an immersion blender.
  6. Stir in the heavy cream and shredded cheddar.
  7. Season with salt and pepper to taste, then serve warm.
