Blueberry Zucchini Bread

A moist and flavorful zucchini bread loaded with fresh blueberries, perfect for breakfast or a snack.

  • 1 cup grated zucchini
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan generously.
  2. Combine the grated zucchini, fresh blueberries, sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  3. Whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Add the dry ingredients to the wet ingredients gradually, mixing gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 55-60 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Make-Ahead: Keeps well in the fridge for up to a week. Can also be frozen for up to 3 months.
