Blueberry Greek Yogurt Bites

Delightful morning treats crafted with creamy Greek yogurt and juicy blueberries, offering a healthy and flavorful snack.

  • 1½ cups (370g) plain Greek yogurt
  • 1 tablespoon honey or maple syrup
  • ½ teaspoon vanilla extract
  • ¾ cup (100g) fresh or frozen blueberries
  • 1 teaspoon lemon juice
  • 1 teaspoon honey (optional)
  • 1 teaspoon chia seeds (optional)

Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Allow the berries to cook for 5–6 minutes, stirring frequently until they soften and release their juicy goodness. Lightly mash with a spoon to achieve a jam-like consistency. Once thickened, remove from heat and mix in chia seeds if using. Let cool completely.
  2. Make the Yogurt Base: In a medium mixing bowl, whisk together the Greek yogurt, vanilla extract, and honey until smooth and creamy. Adjust sweetness to taste.
  3. Assemble the Bites: Spoon about 1 tablespoon of yogurt mixture into each cavity of your silicone mini muffin tray, filling them ¾ of the way. Add about ½ teaspoon of cooled blueberry compote atop each dollop of yogurt. Use a toothpick to gently swirl the compote into the yogurt.
  4. Freeze: Place the tray flat in the freezer for at least 2 hours, or until firm.
  5. Serve & Store: Once frozen, carefully remove the bites from the molds. Store in an airtight container in the freezer. Let thaw for 2–4 minutes before serving.

Notes

For a variation, use other berries or add nuts. Ensure the compote cools entirely before mixing with yogurt.
