Blueberry Cottage Cheese Muffins

Delicious muffins that combine the lightness of cottage cheese with the sweetness of blueberries for a nutritious treat.

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup blueberries
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by either lining it with paper liners or lightly greasing it.
  2. Combine the cottage cheese, eggs, milk, honey (or maple syrup), and vanilla extract in a mixing bowl. Mix thoroughly until well blended.
  3. Whisk together the flour, baking powder, and salt in another bowl until combined.
  4. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in the blueberries and lemon zest gently.
  6. Spoon the batter evenly into muffin cups, filling them about two-thirds full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

Store leftovers in an airtight container for up to three days or freeze for longer storage. Reheat before serving.
