Comforting Hearty Soup

A nourishing and versatile soup, perfect for warming your soul with every spoonful.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken or vegetable broth
  • 1 cup shredded chicken, diced tofu, or beans
  • 2 teaspoons thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional: splash of cream

Instructions

  1. Heat your Dutch oven over medium heat, add olive oil, and toss in diced onions. Sauté until translucent.
  2. Add minced garlic and sauté just until fragrant.
  3. Stir in your chopped carrots and celery and cook until tender.
  4. Pour in the broth, scraping any browned bits from the bottom to incorporate every morsel.
  5. Incorporate your protein of choice and let everything simmer together.
  6. Stir in freshly chopped herbs, adjust seasoning, and add cream if desired.
  7. Blend the soup using an immersion blender for a smoother texture.
  8. Ladle the soup into bowls, garnishing with fresh herbs and a drizzle of olive oil.

Notes

This soup can be made ahead of time and often tastes better the next day. Customize with leftover vegetables or different grains.
