The Best Bacon Sandwich

A delicious bacon sandwich featuring crispy bacon, sweet caramelized onions, smoky chipotle mayo, and fresh arugula, all on perfectly toasted bread.

  • 8 slices thick-cut bacon
  • 1 large red onion, thinly sliced
  • 1/2 cup mayonnaise
  • 2 tablespoons chipotle sauce (adjust to taste)
  • 2 cups fresh arugula
  • 4 slices sturdy bread (sourdough or ciabatta)

Instructions

  1. Cook the bacon: Place your strips of bacon in a skillet over medium heat. Cook until crispy, approximately 4-6 minutes per side. Drain on paper towels.
  2. Caramelize the onions: In the same skillet, add the onions with a pinch of salt. Cook over low heat until golden and sweet, about 15-20 minutes.
  3. Mix the chipotle mayo: In a bowl, combine mayonnaise and chipotle sauce.
  4. Assemble the sandwich: Toast the bread, spread chipotle mayo on one slice, layer bacon, onions, and arugula, then top with another slice of bread.
  5. Serve immediately and enjoy warm.

Notes

For a lighter option, turkey bacon can be used. Make the caramelized onions a day in advance for enhanced flavor.
