Bang Bang Chicken Skewers

Delicious grilled chicken skewers marinated in a creamy, zesty sauce perfect for any gathering.

  • 1 lb chicken breast, cut into cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp sriracha sauce
  • 2 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Skewers (wooden or metal)
  • Chopped green onions (for garnish)

Instructions

  1. Mix the Marinade: In a large mixing bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, salt, and black pepper. Stir until smooth.
  2. Marinate the Chicken: Add the cubed chicken to your marinade, stirring to ensure each piece is well-coated. Cover the bowl and refrigerate for at least 30 minutes, preferably up to overnight for enhanced flavor.
  3. Preheat the Grill: Prepare your grill by preheating it to medium-high heat. If using wooden skewers, remember to soak them in water for 30 minutes before this step.
  4. Thread the Chicken: Once marinated, remove the chicken from the refrigerator. Carefully thread the pieces onto the skewers, ensuring they are evenly spaced for optimal grilling.
  5. Grill the Skewers: Place the skewers on the grill. Grill for 10-15 minutes, turning occasionally until the chicken is cooked through and has lovely grill marks.
  6. Rest and Garnish: Remove the skewers from the heat and allow them to rest for a few minutes. Before serving, sprinkle chopped green onions on top for a fresh finish.

Notes

For added sweetness, feel free to experiment with honey or agave in the marinade. Use Greek yogurt instead of mayonnaise for a lighter option.
