  • 4 large russet potatoes
  • 1/2 cup butter
  • 1 medium onion, chopped
  • 1/2 cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups milk
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Bake the potatoes on a baking sheet for about 1 hour or until fork-tender. Let cool slightly and scoop insides into a bowl.
  2. Melt the butter in a large pot over medium heat, then add the chopped onion and sauté until translucent, about 3-5 minutes.
  3. Stir in the flour, cooking for 1-2 minutes until lightly golden to create a roux.
  4. Add the chicken broth gradually, whisking to bring to a gentle simmer.
  5. Pour in the milk and add the reserved potato insides, stirring well to combine.
  6. Mix in the sour cream and half of the shredded cheddar, stirring until melted and heated through.
  7. Serve the soup with remaining cheese and garnish with chopped green onions.
