Almond Banket Bars

Delightful bars filled with creamy almond paste and topped with crunchy sliced almonds, perfect for sharing.

  • 1 cup almond paste
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg white (for glaze)
  • Sliced almonds (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your baking pan by greasing and flouring it.
  2. Combine the almond paste and sugar in a large mixing bowl and beat until creamy using an electric mixer.
  3. Add the softened butter to the mixture and beat until smooth and fluffy.
  4. Incorporate the egg, vanilla extract, and almond extract, mixing until combined.
  5. Whisk together the flour, baking powder, and salt in another bowl, then gradually mix into the wet ingredients.
  6. Spread half of the dough evenly in your prepared pan.
  7. Roll out the remaining dough between parchment paper and place it over the first layer.
  8. Brush the top layer with beaten egg white and sprinkle sliced almonds on top.
  9. Bake for 25-30 minutes or until golden brown.
  10. Cool completely in the pan before cutting into squares or rectangles.

Notes

Ensure your butter is at room temperature and avoid overmixing the dough.
