Zucchini Grilled Cheese

A delightful twist on the classic grilled cheese, this Zucchini Grilled Cheese combines the comfort of melty cheese with the nutrition of fresh zucchini, making it a perfect dish for any occasion.

Ingredients

  • 2 cups grated zucchini
  • 1 large egg
  • ½ cup freshly grated Parmesan
  • ¼ cup cornstarch
  • Salt and pepper, to taste
  • 2 tablespoons fresh churned garlic butter
  • 12 cups shredded Cheddar

Instructions

  1. Squeeze the moisture out of your grated zucchini using cheesecloth or a clean kitchen towel.
  2. Combine the dry zucchini with the egg, Parmesan, cornstarch, salt, and pepper in a mixing bowl and mix until a dough-like texture forms.
  3. Heat the garlic butter in a skillet over medium heat.
  4. Scoop half of the zucchini mixture into the skillet and shape it into a patty. Repeat for a second patty.
  5. Cook for about 3–4 minutes on each side until golden brown and crispy.
  6. Sprinkle 1 cup of shredded Cheddar cheese atop one patty and place the second on top to create a sandwich.
  7. Cook for an additional 3 minutes until the cheese melts.
  8. Remove the sandwich from the skillet and let it cool slightly before slicing.

Notes

For added flavor, customize by adding herbs or swapping cheeses. Refrigerate leftover zucchini mixture for later use.
