Zesty Lime Shrimp and Avocado Salad

A refreshing and vibrant summer salad featuring shrimp marinated in lime juice, paired with creamy avocado, red onion, and cilantro.

  • 1 lb medium shrimp
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 2 ripe avocados, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Combine the shrimp with freshly squeezed lime juice and olive oil in a bowl. Let marinate for 15 minutes.
  2. Heat a non-stick skillet over medium heat and sauté the marinated shrimp for about 3-4 minutes, until pink and slightly golden.
  3. Mix together diced avocados, red onion, and cilantro in a large mixing bowl.
  4. Add the sautéed shrimp to the bowl, gently incorporating them with the other ingredients.
  5. Finish with a sprinkle of salt and pepper, taste and adjust as necessary.
  6. Serve the salad chilled, garnished with extra cilantro if desired.

Notes

For a spicier version, add diced jalapeño to the salad. Enjoy fresh to maintain avocado quality.
