White Chocolate Raspberry Cheesecake Balls

Delicious bite-sized cheesecake balls bursting with raspberry flavor, coated in creamy white chocolate.

  • 8 oz cream cheese, softened
  • 0.5 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries, mashed
  • 1 cup crushed graham crackers
  • 0.5 cup white chocolate chips, melted
  • 0.25 cup coconut oil or vegetable oil
  • Additional white chocolate for drizzling (optional)
  • Fresh raspberries for garnishing (optional)

Instructions

  1. Beat the softened cream cheese using an electric mixer until smooth.
  2. Gradually add the powdered sugar, vanilla extract, and a pinch of salt.
  3. Fold in the mashed raspberries to maintain a marbled effect.
  4. Add the crushed graham crackers and mix until evenly distributed.
  5. Chill the mixture in the refrigerator for about 30 minutes.
  6. Roll tablespoon-sized portions into balls.
  7. Place the balls on a parchment-lined baking sheet and insert a toothpick into each.
  8. Melt white chocolate and coconut oil together.
  9. Dip each ball into the melted white chocolate.
  10. Drizzle remaining melted white chocolate over the balls.
  11. Refrigerate for at least 1 hour to set before serving.

Notes

For a lighter version, try low-fat cream cheese. These can be made a day in advance and stored in the refrigerator.
