  • 8 corn tortillas
  • 1 cup Monterey Jack cheese, shredded
  • 1 avocado, mashed
  • 1 lime, zested and juiced
  • Fresh cilantro, for garnish

Instructions

  1. In a slow cooker, combine the beef, onion, garlic, cumin, chili powder, salt, and pepper.
  2. Cook on low for 8 hours or until the beef is tender and easily shredded.
  3. Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
  4. Heat a skillet over medium-high heat and add a little oil.
  5. Fry the corn tortillas until crispy, about 1-2 minutes on each side.
  6. Assemble the tacos by adding shredded beef, Monterey Jack cheese, and guacamole to each tortilla.
  7. Top with lime zest and fresh cilantro before serving.
