- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- Food coloring (for frosting)
- 3 cups powdered sugar (for frosting)
- 1 cup unsalted butter, softened (for frosting)
- 2 tablespoons heavy cream (for frosting)
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and heavy cream, mixing until smooth.
- Divide the frosting into bowls and add food coloring to achieve desired pastel shades.
