Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk, and mix until just combined.
  7. Fill the cupcake liners about 2/3 full with the batter.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Let the cupcakes cool completely before frosting.
  10. For the frosting, beat the softened butter until creamy, then gradually add the powdered sugar and heavy cream, mixing until smooth.
  11. Divide the frosting into bowls and add food coloring to achieve desired pastel shades.
  12. Frost the cooled cupcakes with the pastel frosting and enjoy!
