Vampire Bite Red Velvet Cupcakes are a spooky and delicious treat perfect for Halloween or any themed party. These moist red velvet cupcakes are topped with cream cheese frosting and feature a fun ‘bite’ taken out of them, revealing a red filling that resembles blood.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cocoa powder
  • ½ teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, mix together the flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk together the oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
  4. Combine the wet and dry ingredients until just mixed.
  5. Fill the cupcake liners about 2/3 full with the batter.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let the cupcakes cool completely.
  8. For the frosting, beat the cream cheese until smooth, then gradually add the powdered sugar, milk, and vanilla extract until creamy.
  9. Once the cupcakes are cool, use a small knife to cut a ‘bite’ out of the top of each cupcake.
  10. Fill the ‘bite’ with red gel or jam to resemble blood.
  11. Frost the cupcakes with cream cheese frosting and enjoy!

Notes

  • For a more intense red color, add more food coloring as desired.
  • These cupcakes can be made a day in advance and stored in an airtight container.
  • Feel free to use store-bought frosting if you’re short on time.
