Dublin Coddle

A traditional Irish dish filled with layers of hearty potatoes, juicy sausages, and crispy bacon, simmering in a rich broth.

Ingredients

  • 4 large potatoes, peeled and sliced
  • 6 sausages (pork or beef)
  • 4 strips of bacon, chopped
  • 1 large onion, sliced
  • 4 cups chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the bacon in a large pot until crispy. Remove and set aside.
  2. Brown the sausages in the same pot for about 5–7 minutes.
  3. Layer the sliced potatoes and onions at the bottom of the pot.
  4. Nestle the browned sausages and crispy bacon on top.
  5. Pour the broth over the ingredients to just cover them.
  6. Season with salt and pepper, cover, and simmer for 90-120 minutes.
  7. Serve in bowls garnished with chopped parsley.

Notes

Dublin Coddle tastes even better the next day! Store leftovers in an airtight container.
