1 block firm tofu, pressed and cubed
1 cup broccoli florets
1 cup bell peppers, sliced
1 cup carrots, julienned
1 cup cooked brown rice
1/4 cup teriyaki sauce
2 tablespoons sesame oil
1 tablespoon sesame seeds
2 green onions, chopped
Instructions
Press the tofu to remove excess moisture and then cut it into cubes.
In a large skillet, heat sesame oil over medium heat.
Add the cubed tofu and cook until golden brown on all sides.
Add the broccoli, bell peppers, and carrots to the skillet and stir-fry for about 5 minutes.
Pour the teriyaki sauce over the tofu and vegetables, stirring to coat evenly.
Cook for an additional 2-3 minutes until everything is heated through.
Serve the tofu and vegetable mixture over cooked brown rice.
Garnish with sesame seeds and chopped green onions before serving.
Notes
For a spicier version, add red pepper flakes to the stir-fry.
Feel free to substitute any vegetables based on your preference.
