Taco Rice Bowl

A delicious and customizable taco rice bowl filled with savory ground meat, black beans, and fresh vegetables over fluffy rice.

  • 1 pound ground beef or turkey
  • 1 cup uncooked rice
  • 2 cups water or broth
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • Chopped lettuce
  • Sour cream
  • Salsa
  • Chopped green onions
  • Avocado (optional)

Instructions

  1. Cook the rice by bringing 2 cups of water or broth to a boil with the rice, then cover and simmer according to package instructions for 15-20 minutes.
  2. Brown the ground meat in a large skillet over medium heat until fully cooked, stirring occasionally and draining excess fat.
  3. Add taco seasoning to the meat and stir until evenly coated. Heat through black beans for about 2 minutes.
  4. Combine the fluffy rice with the seasoned meat and black beans in the skillet and stir gently.
  5. Serve by scooping the mixture into bowls, adding toppings like corn, diced tomatoes, shredded cheese, lettuce, sour cream, salsa, and green onions. Include avocado for extra flavor!

Notes

Experiment with custom toppings such as jalapeños, cilantro, or crushed tortilla chips for added flavor and crunch.
